Strawberry Meringue Cake
- 1 pkg. yellow cake mix
- 4 eggs, separated
- 1 1/2 tsp. grated orange peel
- 1 c. plus 2 Tbsp. sugar
- 1 qt. fresh strawberries
- 1 carton whipping cream
- 1/4 tsp. cream of tartar
- Combine cake mix, egg yolks, orange peel and mix.
- Beat 4 minutes at medium speed.
- Pour into 2 greased and floured round cake pans.
- Beat egg whites with cream of tartar to soft peaks. Gradually add the 1 cup sugar, beating to stiff peaks.
- Spread meringue evenly over batter.
- Bake at 350u0b0 for 35 minutes and let cool.
- Remove from pan, meringue side up.
- Mash 1/2 cup strawberries with 2 tablespoons sugar; whip cream until stiff. Spread 1/2 of cream mixture over bottom meringue.
- Reserving 2 cups whole berries, slice remainder and place over creamed mixture.
- Top with remaining cream mixture and whole berries.
