Crawfish Fettucini
- 3 sticks margarine
- 3 medium onions
- 3 ribs celery
- 2 bell peppers
- 1/4 c. flour
- 3 lb. crawfish tails
- 1 lb. fettucini noodles
- Parmesan to taste
- 1 qt. half and half cream
- 1 lb. Velveeta cheese, cubed 1/2-inch thick
- 2 Tbsp. chopped jalapeno pepper
- 3 cloves garlic, crushed
- salt and pepper to taste
- Melt butter in a large, heavy saucepan.
- Add vegetables.
- Cook 10 minutes until clear.
- Add flour.
- Blend in well.
- Cover and cook 20 minutes, stirring often.
- Add cream, cheese, jalapeno and garlic and mix well.
- Cook covered on low heat 20 minutes.
- Stir occasionally.
- Cook noodles according to package directions.
- Drain and add sauce.
- Mix thoroughly.
- Add crawfish.
- Pour in a 2 to 3-quart buttered casserole.
- Bake at 350u0b0 for 12 minutes.
- Serves 12.
