Crawfish Fettucini

  1. Melt butter in a large, heavy saucepan.
  2. Add vegetables.
  3. Cook 10 minutes until clear.
  4. Add flour.
  5. Blend in well.
  6. Cover and cook 20 minutes, stirring often.
  7. Add cream, cheese, jalapeno and garlic and mix well.
  8. Cook covered on low heat 20 minutes.
  9. Stir occasionally.
  10. Cook noodles according to package directions.
  11. Drain and add sauce.
  12. Mix thoroughly.
  13. Add crawfish.
  14. Pour in a 2 to 3-quart buttered casserole.
  15. Bake at 350u0b0 for 12 minutes.
  16. Serves 12.
