Cabbage Soup (Diet)
- 1/2 head cabbage, shredded
- 1 can French-style green beans
- 1 can mushrooms with liquid (optional)
- 3 stalks celery, chopped
- 3 c. tomato juice
- carrots (optional)
- onion flakes (optional)
- 2 to 3 beef bouillon cubes
- salt and pepper to taste
- 2 c. powdered nonfat milk
- 3/4 c. cornstarch
- 1/4 c. or less instant chicken bouillon
- 2 Tbsp. dried onion flakes
- 1 tsp. basil leaves
- 1 tsp. thyme leaves
- 1/2 tsp. pepper
- Combine all ingredients, mixing well.
- Store in airtight container until ready to use.
- To substitute for one can of condensed soup, combine 1/3 cup dry soup mix with 1 1/4 cups of cold water in a saucepan.
- Cook and stir until thickened.
- Add to casseroles as you would the canned product.
- Makes equivalent of 9 cans of soup.
- Calories 131, fat 1 g, sodium 728 mg and fiber trace.
