Autumn Grains
- 1 3/4 c. chicken broth
- 1 c. orange juice
- 1 1/2 c. butternut squash
- 1/2 c. onion, chopped
- 1/3 c. wild rice, uncooked
- 1/3 c. brown rice, uncooked
- 1/4 tsp. salt, optional
- 1/4 tsp. cinnamon
- 1/4 tsp curry powder
- 1/8 tsp. cardamon, ground
- 1/8 tsp. ginger
- 1/2 c. raisins
- 1/3 c. pearl barley
- 1/4 c. pecans, toasted
- Combine broth and orange juice in a large sauce pan;
- bring to a boil.
- Add squash and next 8 ingredients (onion to ginger). Cover;
- reduce heat and simmer 20 minutes.
- Add raisins and barley.
- Cover and cook 35 to 40 minutes or until grains are tender and liquid is absorbed.
- Stir in pecans, serve immediately. Yield: 5 servings.
