Mom'S Pound Cake
- 3 sticks butter
- 3 c. sugar
- 5 large eggs or 6 small
- 1 c. evaporated milk (canned, undiluted and not condensed milk)
- 3 1/2 c. plain or all-purpose flour, sifted (measure after sifting)
- 1 tsp. salt
- 1 tsp. baking powder
- 1 or 2 tsp. vanilla flavoring *
- 1 or 2 tsp. lemon flavoring *
- *I use 2 of each.
- Cream butter in mixer.
- Add sugar gradually; add one egg at a time and beat after each (always break egg in saucer because if egg should be bad, it will ruin cake, very depressing!)
- Add milk alternately with sifted dry ingredients.
- Always begin with flour and end with flour.
- Add flavorings and pour into tube pan which has been greased with Crisco or vegetable oil (use paper towel). Line bottom with waxed paper, then dust with flour and shake off excess by tapping on pan over sink.
- Preheat oven to 350u0b0.
- Bake 1 hour (do not open oven door), then lower heat to 325u0b0 and bake another 20 minutes.
