Red Beans And Rice With Sausage

  1. Wash and drain beans; then place in a 4 to 6-quart saucepan. Cover with water.
  2. Add Tabasco sauce, salt, pepper and hambone. Put lid on and soak overnight.
  3. (You can rapid boil for 1 hour instead.)
  4. The next day (or after rapid boiling) fill pan with water.
  5. Add onions, garlic, bay leaf and thyme.
  6. Bring to a boil; then simmer, stirring occasionally.
  7. After about an hour, remove hambone and bay leaf.
  8. Continue simmering until beans are soft. Occasionally mash several beans on side of pan to form soupy mixture.
  9. Slice sausage and add for 10 to 15 minutes.
  10. Serve over rice with buttered French bread.
