Oven Barbecue Chicken
- 1 (2 1/2 to 3 lb.) chicken
- 1/2 c. flour
- 1 tsp. salt
- dash of pepper
- 1/4 c. butter or margarine
- 1/4 c. cooking oil
- 1/2 c. diced onion
- 2 Tbsp. margarine
- 1/2 c. chopped celery
- 1/2 c. chopped green pepper
- 1 c. catsup
- 1 c. water
- 2 Tbsp. Worcestershire sauce
- 1 Tbsp. brown sugar
- 1 Tbsp. vinegar
- dash of black pepper
- dash of red pepper
- Mix flour, salt and pepper.
- Roll chicken in mixture.
- Fry in oil and margarine until golden brown.
- Put in bake dish;
- cover with sauce.
- Using 2 tablespoons margarine, saute onion until clear.
- Add remaining ingredients; bring to a boil.
- Pour over chicken.
- Bake in oven for 1 hour at 325u0b0.
- Cover while baking.
