Sweet Potato Puff
- 1/4 c. sliced green onion
- 2 Tbsp. snipped parsley
- 3/4 tsp. salt
- 1/4 tsp. dried marjoram, crushed
- dash of pepper
- 3 Tbsp. butter or margarine
- 3 Tbsp. all-purpose flour
- 3/4 c. milk
- 1 1/2 c. mashed cooked sweet potatoes
- 3 egg yolks
- 3 stiffly beaten egg whites
- In a saucepan, cook onion, parsley, salt, marjoram and pepper in butter or margarine until onion is tender, but not brown. Blend in flour. Stir in the milk all at once.
- Cook and stir until mixture is thickened and bubbly. Stir in sweet potatoes. Beat egg yolks until thick and lemon colored, about 5 minutes. Slowly blend in sweet potato mixture. Fold into egg whites.
- Gently pour into a 1-quart souffle dish. Bake at 325u0b0 for 60 to 65 minutes.
