Cactus Country Meat Loaf
- 3/4 c. Sonoma dried tomato bits
- 1/4 c. yellow corn meal
- 3 large garlic cloves, minced
- 3/4 c. boiling water
- 1 1/2 lb. lean ground beef
- 2 eggs
- 2/3 c. sliced green onions
- 1 (4 oz.) can canned diced mild green chiles
- 1/3 c. fresh cilantro, chopped or parsley
- 2 fresh or canned jalapeno peppers, seeded and finely chopped
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- In large bowl, mix tomato bits, corn meal, garlic and water. Set aside 10 minutes.
- Add remaining ingredients.
- Mix to blend thoroughly.
- In shallow baking pan, form loaf about 12 x 4-inches. Sprinkle with about 1 tablespoon corn meal.
- Bake in 375u0b0 oven 50 minutes to 1 hour.
- Let stand 10 minutes before slicing.
