Spiced Shrimp
- 1/2 gal. water
- 1 Tbsp. caraway seed
- 1 Tbsp. black pepper
- 1 Tbsp. pickling spice
- 1 tsp. cayenne
- 1 bay leaf
- 1 tsp. dry mustard
- 4 tsp. salt
- top leaves from 1 bunch celery
- 6 lb. shrimp, well washed, not peeled
- 1/2 lb. butter
- juice from 2 large lemons
- 1 Tbsp. tarragon vinegar
- 1 Tbsp. Worcestershire sauce
- 2 Tbsp. soy sauce
- 7 or 8 dashes Tabasco
- 1 tsp. salt
- Boil water, caraway seed, black pepper, pickling spice, cayenne, bay leaf, mustard, 4 teaspoons salt and celery leaves for 20 minutes before putting in shrimp. Shrimp must be put in the boiling spice water and cook 10 minutes after water starts to boil again.
