Grilled Chicken Over Spinach
- 1 to 2 tablespoons olive oil
- 1 tablespoon cider vinegar
- 1 garlic clove, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon salt
- Dash pepper
- 4 boneless skinless chicken breast halves (1 pound)
- 1 green onion, finely chopped
- 1 to 2 garlic cloves, minced
- 1 to 2 tablespoons olive oil
- 1/2 pound fresh mushrooms, sliced
- 1 package (10 ounces) fresh spinach, torn
- In a large bowl, combine the first eight ingredients. Spoon over chicken. Grill, uncovered, over medium heat for 7 minutes on each side or until juices run clear.
- In a large skillet, saute onion and garlic in oil for 1 minute or until crisp-tender. Stir in mushrooms; saute for 3-4 minutes or until tender. Add spinach; saute for 2 minutes or until wilted. Transfer to a serving platter; top with chicken.
