Cherry Pie
- 2 cans pitted tart cherries
- 3/4 c. sugar
- 1/4 c. cornstarch
- pinch of salt
- 1/2 tsp. almond flavoring
- 1/2 c. sugar
- 1/4 tsp. cinnamon
- 2 Tbsp. margarine
- 2 pie shells
- Drain cherries, reserving juice (1 cup).
- Mix cherries and 1/2 cup sugar and set aside.
- Combine 3/4 cup sugar, cornstarch, cinnamon and salt in a medium saucepan.
- Stir until all lumps are dissolved; gradually add cherry juice.
- Cook over low heat, stirring constantly, until smooth and thick.
- Remove from heat and stir in cherries.
- Add margarine and almond flavoring.
- Pour into pie crust.
- Cover with top crust.
- You can butter top crust to make it brown better.
- Cut slits in top crust.
- Bake at 400u0b0 for 30 to 45 minutes or until golden brown.
