Tamale Casserole
- 1 1/2 lb. ground beef
- 1 large onion, diced
- 2 large garlic cloves, chopped
- 1 tsp. salt
- 1 Tbsp. chili powder
- 16 oz. tomato sauce
- 10 1/2 oz. consomme
- 1 tall can whole corn
- 1/2 c. parsley, chopped
- 1 tall can pitted black olives
- mashed corn chips
- 1 1/2 c. grated Cheddar cheese
- 2 (4 1/2 oz.) cans chopped olives
- Brown ground beef.
- Add the onion, garlic, salt, chili powder, tomato sauce, consomme, corn, parsley and olives; heat to boiling in an iron skillet.
- Stir in 7 ounces of corn chips.
- Scoop this into a 2-quart greased casserole dish; sprinkle with the Cheddar cheese and chopped olives.
- Bake at 350u0b0 for 30 minutes.
- Serves 8.
