Scampi A La Marinara
- 5 Tbsp. olive oil
- 2 garlic cloves, minced
- 1 (1 lb. 13 oz.) can Italian tomatoes (undrained)
- 2 Tbsp. snipped parsley
- 2 1/2 tsp. salt
- 1 tsp. dried oregano
- 1/2 tsp. garlic salt
- grated Parmesan cheese
- hot cooked spaghetti or rice
- 1/2 tsp. dried basil
- 1/4 tsp. pepper
- 2/3 c. canned tomato paste
- 2 lb. cooked, shelled and deveined shrimp
- In hot oil, in skillet, cook garlic just until golden.
- Add tomatoes, parsley, basil, salt and pepper.
- Simmer, uncovered, 1/2 hour.
- Stir in oregano and tomato paste and cook, uncovered, for 15 minutes.
- Stir in garlic salt and shrimp.
- Heat, stirring to combine.
- Serve topped with grated cheese over spaghetti or rice if desired.
