Palm Desert Stuffed Date Drops
- 1 lb. pitted dates (approximately 70)
- 1 c. pecan or walnut halves
- 1 1/4 c. flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 c. soft shortening
- 3/4 c. firmly packed brown sugar
- 1 egg
- 1/2 c. sour cream
- Golden Frosting (see recipe)
- Heat oven to 400u0b0.
- Stuff dates with nut halves.
- Sift flour, baking powder, baking soda and salt together into a bowl.
- In a large bowl, beat shortening until creamy.
- Add brown sugar and beat until smooth.
- Add egg and beat well.
- Add dry ingredients alternating with sour cream.
- Stir dates in gently.
- Scoop mixture by tablespoonfuls (including a date in each tablespoonful) and drop on lightly greased cookie sheets.
- Bake 8 to 10 minutes or until lightly browned.
- Cool.
- Frost cookies if desired with Golden Frosting (see recipe).
- Store in airtight container.
- Makes approximately 5 dozen cookies.
