Root Beer Float Cookies
- 1/2 cup butter, softened
- 1 cup packed brown sugar
- 1 large egg
- 1 teaspoon root beer concentrate
- 1-3/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup butter, softened
- 1-1/3 cups confectioners' sugar
- 1 teaspoon water
- 1 teaspoon root beer concentrate
- In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg and root beer concentrate. Combine the flour, salt and baking soda; gradually add to creamed mixture and mix well.
- Shape dough into 3/4-in. balls. Place 2 in. apart on ungreased
- . Bake at 375u0b0 for 6-8 minutes or until lightly browned. Remove to wire racks to cool completely.
- In a small bowl, beat the filling ingredients until smooth. Spread on the bottoms of half of the cookies; top with remaining cookies.
