Spiced Fruit Compote
- 2 (16 oz.) cans peach halves, drained (reserve juice)
- 2 (3-inch) cinnamon sticks
- 1/2 tsp. ground allspice
- 1/8 tsp. ground ginger
- 1/8 tsp. nutmeg
- 2 (16 oz.) cans pear halves, drained
- 2 (16 oz.) cans apricot halves, drained
- 1/2 c. maraschino cherries
- 1/2 c. brandy
- 3 bananas, sliced in 1-inch chunks
- Stir spices into peach juice in saucepan; bring to a boil. Reduce heat to low.
- Cover and simmer 10 minutes, stirring occasionally.
- Remove saucepan from heat and cool.
- In large bowl, combine pears, apricots, cherries and brandy.
- Pour cooled spiced syrup mixture over fruits.
- With rubber spatula, gently toss mixture to mix well.
- Cover and refrigerate overnight.
- Before serving, stir in banana chunks.
- Makes 12 servings.
