Oriental Vegetable Stir-Fry(Microwave)
- 1 c. green onions
- 2 c. celery
- 1 c. green peppers
- 1 c. carrots
- 1 Tbsp. margarine
- 1 c. fresh snow peas
- 1 c. fresh bean sprouts
- 2 c. fresh mushrooms
- 1/4 c. lite soy sauce
- 1/2 tsp. ground ginger
- In a 2-quart microwave-safe casserole dish, combine green onion, celery, pepper, carrots and margarine.
- Cover.
- Microwave on Full power for 3 minutes.
- Drain.
- Stir in peas, bean sprouts and mushrooms.
- Cover.
- Microwave on Full power for 2 to 3 minutes until vegetables are tender-crisp.
- Drain.
- Mix soy sauce and ginger and pour over vegetables.
- Microwave on Full power 1 minute.
- Serve with rice.
- Makes 4 servings.
