Oriental Vegetable Stir-Fry(Microwave)

  1. In a 2-quart microwave-safe casserole dish, combine green onion, celery, pepper, carrots and margarine.
  2. Cover.
  3. Microwave on Full power for 3 minutes.
  4. Drain.
  5. Stir in peas, bean sprouts and mushrooms.
  6. Cover.
  7. Microwave on Full power for 2 to 3 minutes until vegetables are tender-crisp.
  8. Drain.
  9. Mix soy sauce and ginger and pour over vegetables.
  10. Microwave on Full power 1 minute.
  11. Serve with rice.
  12. Makes 4 servings.
