Christmas Pie
- 1 envelope unflavored gelatin
- 1/2 c. sugar
- 1/8 tsp. salt
- 2 eggs, separated
- 1 1/4 c. milk
- 1 tsp. peppermint flavoring
- 1 c. heavy cream, whipped
- green food coloring
- 1 (9-inch
- ) chocolate cookie crust
- Mix gelatin, 1/4 cup sugar and salt in medium saucepan.
- Beat together egg yolks and milk.
- Stir in gelatin mixture.
- Place over low heat until gelatin dissolves and mixture thickens slightly, about 5 minutes.
- Remove from heat; stir in peppermint. Chill, stirring occasionally, until mixture mounds slightly when dropped from spoon.
- Beat egg whites until stiff but not dry. Gradually add 1/4 cup sugar; beat until stiff.
- Fold in gelatin mixture.
- Fold in whipped cream.
- Add enough green food color to make a nice shade.
- Pour into pie shell.
- Chill until firm. Garnish with cherries.
- Delicious.
