Christmas Pie

  1. Mix gelatin, 1/4 cup sugar and salt in medium saucepan.
  2. Beat together egg yolks and milk.
  3. Stir in gelatin mixture.
  4. Place over low heat until gelatin dissolves and mixture thickens slightly, about 5 minutes.
  5. Remove from heat; stir in peppermint. Chill, stirring occasionally, until mixture mounds slightly when dropped from spoon.
  6. Beat egg whites until stiff but not dry. Gradually add 1/4 cup sugar; beat until stiff.
  7. Fold in gelatin mixture.
  8. Fold in whipped cream.
  9. Add enough green food color to make a nice shade.
  10. Pour into pie shell.
  11. Chill until firm. Garnish with cherries.
  12. Delicious.
