Strawberry Satin Pie

  1. Cover bottom of cooled, baked crust with almonds.
  2. Prepare vanilla pudding according to package directions.
  3. Pour in pie crust.
  4. Slice 2 1/2 cups of strawberries in half and arrange on top of filling, petal fashion.
  5. Place a few whole berries in center.
  6. Crush remaining berries.
  7. Add water and cook for 2 minutes.
  8. Sieve.
  9. Combine sugar and cornstarch.
  10. Gradually stir in berry juice.
  11. Cook and stir until thick and clear.
  12. Tint with red food coloring.
  13. Cool slightly.
  14. Spoon over strawberries. Refrigerate until serving time.
  15. Top with whipped cream.
  16. Serves 6 to 8.
