Microwave Fresh Corn Cheese Quiche
- 6 slices bacon
- 4 ears fresh corn
- 5 eggs, beaten
- 1 1/4 c. milk
- 1/2 c. grated Parmesan cheese
- 2 Tbsp. chopped pimiento (optional)
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 unbaked 9-inch pastry shell (in a glass pie plate)
- paprika
- parsley
- Microwave bacon slices on covered paper plate or dish on High for 5 to 7 minutes or until crisp. Set aside.
- Cut corn off cob and set aside. Combine eggs, milk, cheese, pimiento, salt and pepper.
- Microwave on Medium 2 to 3 minutes or until heated through. Stir well and add corn.
- Pour mixture into the baked pie shell.
- Microwave on Medium 13 to 17 minutes or until firm around edges.
- Center should be slightly soft, but will firm on standing. Sprinkle top with paprika.
- Arrange bacon slices over top and garnish with parsley.
- Yields 6 to 8 servings.
