Banamaranath Muffins
- nonstick vegetable spray
- 1 c. whole wheat flour
- 1/2 c. amaranth flour
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. cinnamon
- 3 Tbsp. margarine
- 3 Tbsp. brown sugar
- 1 egg
- 2 small ripe bananas, mashed (about 1 c.)
- 1/4 c. apple juice
- 1 Tbsp. finely chopped nuts
- Preheat oven to 400u0b0.
- Spray a 12-cup muffin tin with nonstick vegetable spray.
- Combine the flours, baking powder, baking soda and cinnamon in a bowl.
- Beat together the margarine and sugar until light and fluffy.
- Beat in the egg.
- Mix in dry ingredients alternately with the mashed bananas and apple juice.
- Stir in the nuts.
- Spoon the batter into the muffin cups, filling 2/3 full. Bake for 20 minutes or until golden brown.
- Remove to a wire rack for cooling.
