Nisua (Finnish Coffee Bread)

  1. Scald milk.
  2. Add sugar.
  3. Stir.
  4. Cool to lukewarm.
  5. Pour into large bowl.
  6. Add yeast, cardamom seed, salt and 1 cup flour.
  7. Beat in 2 eggs, margarine and shortening.
  8. Stir in 4 to 5 cups flour, mixing well.
  9. Add up to 1 cup flour while kneading dough until it leaves sides of bowl and hands.
  10. Let rise in warm, draft-free place until doubled in size.
  11. Punch down; let rise 1/2 hour longer. Shape into loaves or braids in greased pans.
  12. Let rise until doubled in size.
  13. Bake at 350u0b0 for 15 minutes, then at 325u0b0 for 20 to 25 minutes or until lightly browned.
  14. When cool, frost, if desired.
