Pecan Cake
- 2 c. sugar
- 3/4 c. butter
- 6 eggs, beaten separately
- 1/2 c. whiskey
- 4 c. flour
- 1 tsp. baking powder
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 1/2 c. dark syrup
- 1 lb. golden raisins
- 1 lb. dates
- 1 lb. pecans
- red and green cherries, cut up
- Cream sugar and butter.
- Separate eggs and beat yolks.
- Mix yolks with sugar and butter.
- Add whiskey and syrup.
- Mix spices and baking powder in 3 cups flour.
- Use 1 cup flour on nuts, dates and raisins to coat.
- Add these and cherries to cake mixture. Beat whites of eggs to stand up, but not dry.
- Fold into mixture. Place few of cherries and pecans on top of cake for decoration.
- I put cake in 10-inch tube pan lined with greased brown paper.
- Bake at 250u0b0 for 3 hours.
