Banana Tea Bread
- 1 3/4 c. sifted all-purpose flour
- 2 tsp. double-acting baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. salt
- 1/3 c. soft shortening
- 2/3 c. granulated sugar
- 2 eggs, separated
- 1 c. mashed ripe bananas (2 or 3)
- Start heating oven to 350u0b0 and grease 9 x 5 x 3-inch loaf pan. Beat egg whites until stiff.
- Sift flour, baking powder, soda and salt.
- With electric mixer at medium speed or with spoon, thoroughly mix shortening with sugar, then with egg yolks until very light and fluffy, about 4 minutes altogether.
- Then, at low speed, beat in flour mixture alternately with bananas just until smooth.
- Fold in egg whites.
- Turn mixture into pan.
- Bake 1 hour or until cake tester inserted in center comes out clean.
- Cool in pan 10 minutes; remove.
- Cool overnight before slicing.
