Broccoli Soup
- 1 can cream of chicken soup
- 1 can cream of celery soup
- 1 can cream of potato soup
- 1 can (at least) milk
- 1 (4 oz.) can mushrooms (optional)
- 1 (10 oz.) box broccoli, chopped
- shredded Colby cheese (as much as you like)
- Mix the 3 soups and milk together in a large saucepan.
- Add the mushrooms, if desired, undrained.
- Heat until well blended. Do not burn!
- The broccoli does better if precooked to crisp, either on the stove or microwave.
- Add to the hot soup mixture. The cheese is added last.
- Stir until melted into the soup.
- You can use other vegetables (cauliflower, asparagus or a combination).
- Other cheeses can be used also (Swiss, Cheddar). You really can't ruin this.
- I have even added leftover cooked ham to it.
