Jello Sponge Cake
- 1 box chiffon cake mix (lemon)
- 1 c. chilled water
- 1 pkg. Jell-O instant pudding (vanilla, lemon or chocolate)
- 1 tsp. baking powder
- 1/4 tsp. cream of tartar
- 1/2 c. Wesson oil
- 3/4 c. chilled water
- 4 eggs
- 1 Tbsp. vanilla, lemon or chocolate extract
- Blend in
- a large bowl 1 cup chilled water with package #1 (egg white from cake mix) at low speed for about 2 minutes. Beat attighest
- speedtntil stiff peaks form, about 7 to 10 minutes. Add
- cream
- of
- tartar;
- beat 3 more minutes (do not underbeat). Blend
- in another
- bowl 1 package pudding, baking powder and package #2 of cake mix.
- Make a well in the center of
- these
- dry ingredients.
- Add
- oil, 3/4 cup chilled water, eggs and
- vanilla; beat
- at
- high
- speed for 2 minutes.
- Pour mixturetontaining package
- #2
- over mixture #1; gently fold together until evenly blended.
- Pour into an ungreased 10-inch tube
- pan.
- Cut
- through batter
- with
- spatula
- to remove air bubbles.
