Shrimp Fettucini Casserole
- 1 1/2 c. margarine
- 2 medium onions, chopped
- 2 medium bell peppers, chopped
- 1/4 c. flour
- 4 Tbsp. dried parsley
- 3 lb. shrimp, shelled and uncooked
- 1 pt. half and half
- 1 lb. Velveeta cheese (plain)
- 2 tsp. chopped jalapeno cheese
- 2 cloves garlic, minced
- salt and red pepper to taste
- 1 lb. fettucini, cooked
- Italian bread crumbs
- Parmesan cheese
- Melt oleo in a large pot.
- Add onions and bell pepper; cook until tender.
- Add flour.
- Cook for about 15 minutes, stirring often.
- Add parsley and shrimp; cook, covered, for 15 minutes. Add cream, cheese, jalapeno, garlic salt and red pepper.
- Cook, covered, on low heat for 30 minutes.
- Meanwhile boil fettucini. Drain.
- Add to shrimp mixture; stir until blended.
- Pour into two 9 x 13-inch casseroles.
- Sprinkle with Parmesan cheese and bread crumbs.
- (Freezes well at this point.)
- Bake at 350u0b0 for 20 minutes or until bubbly.
