Slice And Bake Oatmeal Cookies
- 1 1/2 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. shortening, butter or margarine
- 1 c. firmly packed brown sugar
- 1 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 3 c. quick-cooking oats, uncooked
- 1/2 c. chopped pecans
- Combine flour, soda and salt; stir well and set aside.
- Cream shortening; gradually add sugars, beat well, add eggs and vanilla, mix well.
- Add flour mixture; mix well.
- Stir in oats and pecans. Shape dough into two 12-inch rolls, wrap in wax paper, chill or freeze.
- Unwrap and cut in 1/4-inch slices, place on ungreased cookie sheets.
- Bake at 375u0b0 for 8 to 10 minutes.
- Will be light brown.
- Yields 3 dozen.
- Tip:
- Work with chilled dough.
