Deep-Dish Cherry Pie

  1. In a large bowl, combine cherries, sugars, cornstarch, extract, food coloring and salt. Place in a greased 1-1/2-qt. to 2-qt. baking dish. Dot with butter. Set aside.
  2. For crust, in a large bowl, combine the flour, sugar, salt and nutmeg. Cut in shortening. Add water, a little at a time, until a dough forms. Do not over mix. Roll out on a floured surface to fit the top of the casserole. Place on top of the cherries, pressing against the sides of the dish. Cut decorative designs or slits in center to crust.
  3. Brush with milk or cream and sprinkle with sugar. Bake at 350u0b0 for 1 hour or until crust is golden brown. Cool at least 15 minutes before serving.
