Hot Shrimp Cocktail
- 1/2 c. finely chopped onion
- 1 1/2 Tbsp. butter
- 1 3/4 c. canned tomatoes, chopped
- 1/2 c. green pepper, chopped
- 1/3 c. crumbled saltine crackers
- 1 tsp. salt
- 1/8 tsp. pepper
- dash of hot pepper sauce
- 1/8 tsp. nutmeg
- 1/8 tsp. thyme
- 1/8 tsp. mace
- 1 lb. raw shrimp, shelled and deveined
- 1 hard-cooked egg
- parsley (for garnish)
- Preheat oven to 350u0b0.
- Saute onion in butter until limp.
- Add all but shrimp, egg and parsley to the pan and simmer 15 minutes. Add shrimp and simmer an additional 3 minutes.
- Chop the egg and gently stir in.
- Spoon shrimp mixture into individual scallop shells or a 1 1/2-quart casserole and bake 15 minutes.
- Garnish with parsley to serve.
- Serves 6.
