Orange Nut Cake
- 3/4 c. butter or margarine
- 1 c. sugar
- 1 Tbsp. grated orange rind
- 1 tsp. vanilla
- 3 eggs
- 1 c. orange marmalade
- 1 c. chopped nuts
- 3 c. sifted all-purpose flour
- 1/2 tsp. soda
- 2 1/2 tsp. baking powder
- 1 tsp. salt
- 1/2 c. orange juice
- 1/2 c. evaporated milk
- 2 (3 oz.) pkg. cream cheese
- 2 Tbsp. milk
- Cream together the butter, sugar, orange rind and vanilla until fluffy.
- Add eggs, one at a time, beating well after each addition.
- Stir in marmalade and chopped nuts.
- Sift dry ingredients together; add to first mixture alternately with combined orange juice and evaporated milk.
- Turn batter into a waxed paper lined and greased 9-inch tube pan.
- Bake in a 350u0b0 oven for 1 hour.
- Cool in pan 10 minutes.
- Remove from pan.
- Blend together the cream cheese and milk.
- Spoon cream cheese on top of each serving.
- Top with orange sauce.
