So-Easy Sloppy Joes
- 1-1/2 pounds ground beef
- 1 can (10 ounces) diced tomatoes and green chiles, undrained
- 1 can (6 ounces) tomato paste
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon spicy brown mustard
- 1/4 teaspoon salt
- 6 sandwich buns, split
- Fresh arugula, optional
- In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the tomatoes, tomato paste, ketchup, brown sugar, mustard and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Serve on buns. Top meat with arugula.
- Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary. Serve on buns with arugula.
