Spinach Salad - Layered
- 10 oz. fresh spinach
- 6 hard-boiled eggs, sliced
- 1/2 to 1 lb. turkey bacon
- 1/2 head lettuce
- 10 oz. tiny tender frozen peas, uncooked
- 1 medium red onion, sliced
- 1 c. mayonnaise
- 1 c. Miracle Whip
- 1 lb. shredded Swiss cheese
- pepper
- granulated sugar
- Clean spinach and break into bite sized pieces.
- Fry bacon and break into tiny pieces.
- Break lettuce into bite sized pieces. Separate onion slices into rings.
- Combine mayonnaise and Miracle Whip.
- You may substitute plain nonfat yogurt for some of the mayonnaise or Miracle Whip.
- Using a deep 9 x 12-inch dish, first layer the spinach, then sprinkle with pepper and sugar.
- Next layer is eggs, then bacon, lettuce and sprinkle with pepper and sugar. Then layer peas, then onions.
