Banana Pecan Cloud Cake
- 1 1/2 c. granulated sugar
- 1/2 c. butter or margarine
- 2 eggs
- 2 c. sifted all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 c. mashed bananas
- 1 tsp. vanilla
- 1/4 c. buttermilk
- 1 c. heavy whipping cream, whipped
- 2 bananas, sliced
- 1/2 c. chopped pecans
- powdered sugar
- Preheat oven to 350u0b0.
- Beat together butter and sugar until very light and creamy.
- Beat in eggs, one at a time.
- Sift together dry ingredients.
- Combine mashed bananas, vanilla and milk.
- Add the sifted ingredients to the butter mixture in thirds, alternating with thirds of the banana mixture.
- Beat well after each addition until smooth.
- Pour into 2 greased and floured 9-inch round pans.
- Bake for 25 to 30 minutes.
- Cool.
- Dust cooked cakes with powdered sugar.
- Spread bottom layer with whipped cream, bananas (sliced) and chopped pecans.
- Top with second cake layer.
