Ming'S Cashew Chicken
- 1 1/2 chicken breasts
- 1 tsp. cornstarch
- 1 Tbsp. oil
- 3/4 c. unsalted cashews
- 1 tsp. salt
- 3/4 c. bamboo shoots
- 1 Tbsp. oil
- 1/2 tsp. sugar
- 3 Tbsp. oil
- 1/2 c. sliced mushrooms
- 2 tsp. cornstarch in 2 tsp. water
- 1/2 c. chicken stock
- 1 c. snow peas
- 2 Tbsp. soy sauce
- Bone and skin chicken.
- If necessary, slice wafer thin and cut into 1 1/2-inch squares.
- Mix in 1 tablespoon oil and 1 teaspoon cornstarch thoroughly.
- Saute nuts in 1 tablespoon oil until slightly brown.
- In hot pan, place 3 tablespoons oil and salt. Add chicken and saute on hot fire until meat is done.
- Add stock, mushrooms, shoots and peas.
- Cover and cook 1 minute before adding sugar, soy sauce and cornstarch mixed with water.
- Stir until thick.
- Pour in nuts.
- Mix slightly.
- Serve with rice.
