Cinderella'S Fantasy Crepes

  1. Combine eggs, flour, salt and 1 cup milk; beat until smooth. Let stand 30 minutes.
  2. Pout 1/4 cup batter into hot lightly greased 8-inch skillet.
  3. Cook until underside is lightly browned.
  4. Saute vegetables in margarine.
  5. Blend in flour and seasonings.
  6. Gradually add 1 cup milk; cook, stirring constantly, until thickened.
  7. Add 1 1/2 cups cheese, stir until melted.
  8. Stir in chicken or ham.
  9. Fill each crepe with mixture (1/4 cup).
  10. Roll up and place crepes in 11 3/4 x 7 1/2-inch baking dish.
  11. Bake at 350u0b0 for 20 minutes.
  12. Top with remaining cheese.
  13. Continue baking until cheese is melted.
