Mom'S Vegetable Soup
- 2 qt. Water
- 1 Tbsp. Salt
- 1 Tbsp. Vegetable Oil
- 1 tsp. Thyme
- 1 tsp. Pepper
- 1 c. Celery, cut fine
- 1 c. shredded Carrot
- 1 c. Green Peppers, cut into small pieces
- 1 small Onion, cut fine
- 1 can Whole Tomatoes cut into small pieces
- 1 tsp. Sugar
- 1 small can Tomato Sauce
- 1 c. thin Spaghetti, cut into pieces
- 1 small can of Peas (optional)
- 2 Hamburg Patties, browned, broken into pieces (optional)
- 1 tsp. Sugar
- In a large pan put the Water, Salt, Vegetable Oil, Thyme and Pepper bringing to a boil.
- Add the Celery and Carrots; let boil for 5 minutes.
- Add the Green Pepper, Onion, Whole Tomatoes cut up, Sugar and Tomato Sauce; let boil 5 more minutes.
- Then add Spaghetti.
- Add the two or either one of the two optional ingredients.
- It is delicious and gives you a whole meal in one pan.
