Fried Green Tomatoes
- 3/4 c. vegetable oil
- 1/2 c. unseasoned bread crumbs
- 1/2 c. cornmeal
- 1/2 tsp. cayenne pepper
- salt and freshly ground black pepper to taste
- 6 large green tomatoes
- 1 Tbsp. Tabasco sauce
- 1/2 c. all-purpose flour
- 3 egg whites, beaten
- In a large 3 to 4-inch deep frying pan, heat the oil to 375u0b0. In a wide mixing bowl or soup bowl, combine the bread crumbs, cornmeal, cayenne pepper, salt and black pepper.
- Slice the tomatoes about 1/2-inch thick. Sprinkle the Tabasco sauce over the tomatoes. Lightly dust the tomatoes with the flour. Dip the tomato slices into the egg whites and then into the bread crumb mixture. Make sure the tomatoes are well coated on all sides.
- Fry in hot oil for 4 minutes on each side. Drain on paper towels.
