Chicken Gumbo
- 2 Tbsp. flour
- 1/2 c. oil
- 1 slice bacon, diced
- 1 onion, chopped
- 1/2 green pepper, chopped
- 1 clove garlic, minced
- 1 tsp. soy sauce
- 1 Tbsp. Worcestershire sauce
- 1 tsp. salt
- dash of pepper
- dash of hot sauce
- 1 can tomatoes
- 4 whole chicken breasts, cut off the bone in bite-size pieces
- 2 to 3 c. water
- 1 1/2 c. cut okra
- 1 1/2 tsp. gumbo file (optional)
- hot rice
- Combine flour and oil in large Dutch oven.
- Stir over medium heat until flour is medium brown.
- Stir in cut-up bacon and cook 1 minute.
- Add onion, green pepper and garlic and cook until onion is transparent.
- Add next 8 ingredients (soy sauce through water). Simmer 45 minutes, or until chicken is tender.
- Add okra and cook 10 minutes.
- Stir in file just before serving over hot rice.
- Good with cornbread.
