Lisa'S Red Beans And Rice
- 1 to 2 lb. Eckrich or Hillshire Farms Polish sausage (Winn-Dixie Brand about as good and cheaper)
- 2 (1 lb.) cans kidney beans
- 1 medium bell pepper (hand size)
- 2 medium onions (hand size)
- 6 to 8 stalks celery
- 1 pkg. Chili-O chili mix or any good mix
- Mexene brand chili powder (for just a little heat)
- cayenne pepper (for lot of heat)
- 5 to 6 cloves fresh garlic or garlic salt
- Uncle Ben's rice
- 8 oz. fresh mushrooms
- 1 (8 oz.) can tomato paste
- 2 qt. canned tomatoes (home canned the best)
- olive oil (to saute with)
- pinch of cumin for taste
- Cut your sausage up thin.
- Saute in skillet and set aside. Cut up your onions, pepper and celery (coarsely) and saute in olive oil.
- Add tomatoes, seasonings, tomato paste and sausage. Add mushrooms and beans last.
- Cook long and slow on medium to low heat, not high heat.
- Serve over rice with garlic bread.
