Chilled Yellow Tomato Soup
- 2 - 14 1/2 oz. cans reduced sodium chicken broth
- 1 1/2 lbs. yellow tomatoes, peeled, seeded and cut up (about 5 medium)
- 1 large yellow sweet pepper, seeded and cut up
- 2 to 3 yellow banana peppers, seeded and cut up
- 4 garlic cloves, chopped
- 1/2 of a small onion
- 1 small plum tomato, peeled, seeded and diced
- fresh whole chives (optional)
- Combine half of the broth, yellow tomatoes, sweet pepper, banana peppers, garlic and onion in a food processor bowl container.
- Cover and process or blend mixture until smooth. Repeat with the other half of the same ingredients.
- Transfer soup to bowl.
- Cover and chill for 4 hours.
- To serve, pour soup into bowls or cups; sprinkle with chopped plum tomato and if desired, chives.
