Raisin Oatmeal Cookies
- 1 c. all-purpose flour
- 1 tsp. ground cinnamon
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 c. solid margarine, softened (1 stick)
- 2 Tbsp. granulated fructose
- 1 large egg
- 1 tsp. vanilla extract
- 1 c. granulated sugar replacement or 1/8 tsp. Stevia Rebaudiana extract
- 1 1/4 c. quick cooking oatmeal
- 1/2 c. raisins
- Combine flour, cinnamon, baking powder, baking soda and salt in a bowl.
- Stir to mix.
- Combine margarine, fructose, egg and vanilla in a mixing bowl.
- Beat until thoroughly blended.
- Beat in sweetener of your choice.
- Gradually add flour mixture.
- Beat until blended.
- Meanwhile, combine oatmeal and raisins in a bowl. Work with your fingers or a spoon to separate the raisins and coat them with the oatmeal.
- Beat into cookie mixture.
- Drop by tablespoonfuls onto an ungreased cookie sheet.
- Bake at 375u0b0 (190u0b0C) for 10 to 12 minutes.
- Cool slightly on cookie sheet, then move to cooling rack.
