Rainbow Raspberry Surprise Cake
- 1 (2 layer size) pkg. yellow cake mix
- 1 c. sour cream
- 1/4 c. water
- 2 eggs
- 1 (3 oz.) pkg. raspberry flavored gelatin
- confectioners sugar
- In a large bowl, combine the cake mix, sour cream, water and eggs.
- Blend to moisten ingredients, then beat at medium speed for two minutes, until mixture is creamy.
- Grease and flour a 10-inch fluted tube pan.
- Spoon 1/3 of the batter into pan.
- Sprinkle with half of the raspberry gelatin.
- Repeat layers.
- Spread the rest of the batter over gelatin to cover.
- Bake in 350u0b0 oven for 45 to 50 minutes, until cake springs back when lightly pressed.
- Let the cake cool in the pan for 5 minutes.
- Remove cake from pan and finish cooling on a rack.
- Sprinkle confectioners sugar over cake.
