Shrimp Creole
- 4 large onions, chopped
- 1 medium bell pepper, chopped
- 4 stalks celery, chopped
- 3 cloves garlic, chopped
- 1 large can whole tomatoes
- 1 glass water
- 2 tsp. prepared mustard
- 1 bay leaf, crushed
- 2 lb. shrimp, cut up
- 1 small can tomato sauce
- 2 Tbsp. Worcestershire sauce
- 1 tsp. chili powder
- 2 Tbsp. vinegar
- salt and pepper to taste
- Combine first 4 ingredients in frying pan with enough cooking oil to cover.
- Simmer over low fire until clear.
- Combine rest of ingredients; start to simmer on low heat with lid on.
- After first mixture is completed, add to mixture but drain part of oil. Simmer for approximately 1 1/2 hours.
- Serve over rice.
