Mango Cobbler
- 2 c. Bisquick
- 1 c. sugar
- 1 egg
- 2 tsp. vanilla flavor
- 1/2 tsp. coriander
- 2 tsp. nutmeg
- 1/2 c. milk
- 2/3 c. water
- 1 stick melted margarine
- 2 Tbsp. cornstarch
- 3 c. sliced mangos
- 1 Tbsp. lemon juice
- Sift together the Bisquick, 3/4 cup sugar and 1/2 teaspoon nutmeg.
- Add egg and milk; beat thoroughly.
- Stir in melted margarine and 1 teaspoon vanilla; mix thoroughly until smooth. Pour into an 8 x 11-inch pan; set aside.
- In a large bowl, place mangos.
- Dissolve cornstarch in water; add to mangos.
- Stir in 1 teaspoon vanilla, 1 teaspoon nutmeg, coriander, 1/4 cup sugar (or sweeten to taste) and lemon juice.
- Spread mango mixture over Bisquick.
- Bake at 350u0b0 for 50 minutes.
