Meaty Manicotti
- 1 lb. ground beef or ground turkey
- 1/4 c. chopped onion
- 1 clove mashed garlic
- 1 can chopped spinach, drained
- 3/4 c. cottage cheese
- 2 eggs, beaten
- 12 cooked manicotti shells
- 1 jar or can spaghetti sauce
- 1/2 c. grated Parmesan cheese
- 1 c. shredded Mozzarella cheese
- Preheat oven to 350u0b0.
- Lightly grease 13 x 9-inch baking pan; set aside.
- Brown ground beef in medium skillet over medium-high heat.
- Add onion and garlic.
- Saute 3 to 4 minutes.
- Drain off excess fat.
- Remove from heat and add spinach, cottage cheese, eggs, salt and pepper (to taste).
- Stir until well mixed.
- Fill each shell with 1/4 cup meat mixture.
- Place filled shells in prepared baking pan. Pour spaghetti sauce evenly over filled shells.
- Sprinkle Parmesan, then Mozzarella, over all.
- Bake 30 minutes.
