Zucchini Apple Bread
- 4 c. flour
- 1 Tbsp. baking soda
- 1/4 tsp. baking powder
- 1 1/2 tsp. salt
- 1 1/2 Tbsp. cinnamon
- 1/2 tsp. nutmeg
- 5 eggs
- 2 c. sugar
- 1 c. brown sugar, firmly packed
- 1 1/2 c. vegetable oil
- 1 Tbsp. vanilla extract
- 2 c. shredded zucchini (do not peel)
- 1 c. shredded/chopped apple
- 1 1/2 c. walnuts
- 1 pkg. (8) refrigerated breadsticks
- 1/4 c. chopped onion
- 2 tsp. snipped fresh basil or rosemary or 1/2 tsp. dried basil or rosemary
- 1 Tbsp. olive oil or salad oil
- 2 Tbsp. grated Parmesan cheese
- Separate the breadsticks into 8 pieces, leaving them coiled. Place the coils 3 inches apart on a lightly greased baking sheet. Press each coil into a 4-inch circle.
