Oatmeal Superchip Cookies
- 2 sticks butter, softened
- 3/4 c. packed light brown sugar
- 1/2 c. granulated sugar
- 1 tsp. ground cinnamon
- 2 large eggs
- 2 tsp. vanilla extract
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1/2 c. all-purpose flour
- 3 c. uncooked old-fashion or quick oats
- 1 (12 oz.) bag semi-sweet chocolate chunks, chopped
- 1 c. pecans, chopped
- Heat oven to 350u0b0.
- Have baking sheets ready.
- In a large bowl with mixer on high speed, beat first 8 ingredients (butter through salt) until well blended.
- Reduce speed to low; beat in flour just until blended.
- Stir in oats, chocolate and pecans. Drop rounded tablespoons about 1-inch apart on ungreased baking sheets.
- Bake on baking sheet, then remove to a wire rack to cool.
