Franke'S Tamale Pie
- 1 c. cornmeal
- 1 tsp. salt
- 3/4 tsp. chili powder
- 1 c. cold water
- 2 c. boiling water
- 1 Tbsp. oil
- 1/3 c. chopped green pepper
- 1 lb. ground steak or hamburger
- 1/2 tsp. salt
- 1/2 c. sliced ripe olives
- 2 1/2 c. cooked tomatoes, chopped
- 1 Tbsp. chili powder
- 1/2 tsp. salt
- 1 c. grated cheese
- Mix first 4 ingredients.
- Add slowly to boiling water and cook slowly, covered, for 10 minutes, stirring occasionally.
- Line bottom and sides of a 2-quart casserole with cooked cornmeal.
- Set aside.
- Cook next 4 ingredients until meat browns, stirring often. Add next 4 ingredients and simmer for 5 minutes, stirring often. Put this mixture in cornmeal lined casserole.
- Top with grated cheese.
- Bake at 350u0b0 for about 30 minutes.
- Serves 6.
